Puerto Rican Flan de Leche
YUMMY
6 cups milk
1 1/2 cups of sugar
7 Eggs
4 Teaspoons o f vanilla
3 Teaspoons of corn starch diluited with water
1 1/2 cups sugar for caramilizing
1) Combine milk sugar vanilla and bring to a rapid boil.
Reduce heat to moderate and cook for 15 min stirring occassionally
Strain Mixture and allow to cool
2) Pre Heat oven to 350 degrees
3) Caramalize a round 9 x 3 1/2 aluminun pan by melting 1 1/2 cups sugar slowly in the pan to a light gold. Swirl the pan to coat the bottomof thepan and sides with caramel.
Set aside on a wire rack.
4) In a sauce pan blend eggs with a rubber spatula. Mix in the milk and corn starch gradually and strain mixture.
5) Pour Strained mixture into the caramilized pan. Set pan into a large shallow baking pan filled with about 1 inch of HOT water. Bake for 1 hour untill set and top is golden.
6) Allow to cool on a wire rack. Cover and set in refrigerator. Knife will come out clean when ready.
7) When ready to serve turn onto a platter and serve.
Make sure you scrap out all the caramel since this is the best part!
